Homemade Mayonnaise with Avocado Oil

I am kicking myself over here for JUST NOW realizing how EASY IT IS TO MAKE YOUR OWN MAYO! I am a mayo girl. Always mayo for me over mustard. However, I have not been able to find a mayo made with avocado oil that I really like and I have tried them all! So I decided to make my own.

I really intended to try multiple different recipes until I found one that worked, and to be honest I didn’t really expect to love any of them. BOY WAS I WRONG!!!

I found a few different recipes and took aspects of each that I thought would work for me. Mostly I eliminated ingredients. Some mayo recipes are long and drawn out and call for things like Macademia nut oil and I just don't have that lying around my kitchen.

So, my mayo recipe is short and simple! It will take you all of 10 minutes or less to make and only contains 5 INGREDIENTS! You probably have these ingredients in your kitchen already! Ready to make your own mayonnaise? HERE WE GO!

INGREDIENTS(makes 2 cups)

2 EGG YOLKS

1 TEASPOON SALT

2 TABLESPOONS LIME JUICE

2 TEASPOONS DIJON MUSTARD

2 CUPS AVACADO OIL

THIS IS WHAT YOU DO

Mix the egg yolks, salt, dijon mustard & lime juice together in a mixing bowl.

With a hand held whisk or electric whisk mixer SLOWLY mix in the oil. Very slowly pour a bit of oil at a time while you constantly whisk the mixture. You will see it become a mayo consistency very quickly. Whisk until all the oil is mixed in and BAM… you have mayo!
