Apple Crisp

FALL IS HERE!!! Well, kind of. Right now in Tennessee it’s 97 degrees! WHAT? It’s October! Where is the cool air? Cool air or not I know it’s on it’s way and lately I have been trying out recipes for the holidays. This apple crisp is the first one I just had to make! I LOVE A GOOD APPLE CRISP! Now listen ya’ll, this is not a keto apple crisp! It’s impossible to make something keto when it contains 6 apples, but it I used monkfruit sweetener, so there is no added sugar! BAM! The crust is made from almond flour and really crisps up well! I am so excited to finally share this GRAIN FREE, GLUTEN FREE, NO SUGAR recipe with you all!

One major thing I wanted to achieve with this apple crisp recipe was simplicity. I have seen so many paleo recipes that I know are wonderful but they usually contain a bazillion ingredients or include maple syrup which we all know is nothing but a bunch of sugar! I hope you find this recipe easy and quick! Let me know what think! If you make it I would love to see it. Tag me @living_essential on Instagram!

FILLING INGREDIENTS

6 Medium sized apples peeled & diced

1 Tbs lemon juice

2 tsp Ground cinnamon

3 1/2 Tbs Monkfruit sweetener

CRUST INGREDIENTS

2 Cups Almond Flour

3/4 Cup Golden Monkfruit sweetener

1/2 tsp Cinnamon

6 Tbs Cold butter cut into squares or diced

Pinch of salt

INSTRUCTIONS

Preheat the oven to 350

Mix the diced apples, cinnamon, monkfruit sweetener, and lemon juice in mixing bowl.

After it’s mixed well put it in a baking dish. I have used a 10x10 or 8x8. You do you!

For the crisp: In a separate bowl mix together the almond flour, cinnamon, golden monkfruit sweetener, & salt. After that is mixed toss in the cold diced butter. Using your hands work the butter through the mixture until it becomes a crumbly texture.

Spread the “crumble” across the top of your apple mixture.

Bake 45-50 minutes. Make sure the apples are bubbling around the edges of the dish before taking it out.

The almond flour tends to brown quickly, so as soon as you see it browning cover the dish with aluminum foil for the remainder of the cooking time.

When it’s done serve with Keto ice cream or just plain! I personally love it cold for breakfast.
