Philly Cheese Chicken Wrap
A Philly cheese steak sandwich is one of my favorite comfort foods! The sautéed peppers, the ooey gooey cheese, the yummy onion!
The other night I saw a commercial for a Philly cheese steak and that was it! It was all I could think of after that. I checked the fridge… I had peppers, onions, cheese… BUT NO STEAK!! AHHHHH!! It was very sad. Then I realized I had some chicken breasts. So, I decided to make a Philly Cheese Chicken instead! I am glad I did… my husband says he could eat one every day!! long story short… THEY WERE SO GOOD!
THIS IS HOW I MADE IT!
I sliced the chicken into thin strips and tossed them in a skillet with avocado oil. I added some salt and A LOT OF PEPPER to the chicken! I cut the onion into rings and the yellow pepper (any kind of pepper will do) into long thin strips… I sautéed those together in some avocado oil as well. When they were almost done I poured in about 2 tablespoons of balsamic vinegar and cooked for 2-3 more minutes. Then I salted the onions and peppers to taste.
When everything was done I placed the chicken strips into leaves of iceberg lettuce INSTEAD OF BREAD!! I put some provolone cheese between the chicken and the hot veggies so it would melt… then I added a little mayo ( I use the Primal Kitchen mayo) and a little spicy mustard!! They were awesome!!
INGREDIENTS
1-1 1/2 Boneless Chicken Breast (I try to always buy Organic if I can)
1 Pepper (yellow, red, green…doesn’t matter)
1 Medium yellow onion
Salt & Pepper
Half a head of Iceberg lettuce
Mayonnaise (Get a mayo that does not contain vegetable oil… Primal Kitchen Mayo is a great option!)
Spicy Mustard
Makes about 2-3 wraps!!
